Bok Choy with Yellow Bean Sauce


– 1 lb bok choy
– 2 tbs oil
– 2 cloves garlic, crushed
– 2 scallions, white part, thinly sliced
– 2 tbs yellow bean sauce
– 1/4 tsp each salt and ground white pepper


– Rinse bok choy in water and trim.
– Slice into pieces.
– Heat oil in a wok over high heat and stir-fry garlic and scallion until fragrant, about 30 seconds.
– Add spinach and sauce.
– Mix well and season with salt and pepper.
– Transfer to a serving dish and serve immediately.
